Someone who co-authored a paper with him has a number of one. Someone who co-authored a paper with someone who co-authored a paper with Erdos has an Erdos number of two. And so on. The joke is a pun on the number of the beast. (Kevin Bacon, by the way, is the same, except that it's "appeared in a film with" rather than "co-authored".
